#01 Coffee Hands [Shenzhen, China]


Let’s meet Jimi Choi, the roaster and the founder of Coffee Hands. We curate our June coffee selection with Coffee Hands. We first met Jimi back in 2020, our founder Jenny who had just gotten interested in specialty coffee and visited Jimi’s coffee shop in Shenzhen, when Jenny was still studying at uni and just a coffee customer. Fast forward to 2024, we reunited in Shenzhen and Jimi became Jenny’s coach in China Brewer’s Cup 2025 and roasted her competition coffee. Although Jenny didn’t make it to the National finals, our relationship with Coffee Hands has deepened.
Jimi opened his coffee shop, slash café, in 2019. And started his coffee roastery Coffee Hands in 2021. Getting the SCA certificates and learning from different coffee professionals, such as Stefanos Domatiotis, not only equipped him with a solid coffee knowledge foundation but also shaped his value. Jimi believes that, through our hands, we can make coffee better, and everyone can make better coffee. What connects us together isn’t only because Jimi is an excellent roaster, more importantly, we share the same values.
Jimi uses Stronghold s7x in the roastery, Coffee Hands respects the flavours that nature brings to the coffee, so there are three keywords for describing his roasting styles: sweetness, balance, and terroir.
